Soft orange cake

Ingredients

15/8 cup flour (7oz 200g)
2/3 cup potato starch (2,8oz 80g or corn starch)
1/2 cup unsalted butter (at room temperature – 4,2oz (120g))
13/8 cup granulated sugar (7oz 200g)
2 oranges (juice and grated zest)
3 eggs (separate the yolks from the whites)
2 teaspoons baking powder for sweets (16g)
1/4 teaspoon salt
powdered sugar

Steps

Soft orange cake is very easy to make.

First, preheat the oven to 350°F (180° C).

Separate the egg whites and the egg yolks. Whisk egg whites for about 5 minutes until stiff.

Place softened butter and sugar into a large bowl (or in the planetary bowl).

Mix, using planetary mixer on medium speed until butter mixture is light and fluffy.

Now add the egg yolks, keep mixing until you obtain a soft and fluffy mixture.

Grate the zest of 1 orange. Reduce speed to low and add it to the mixture together with the juice of both the oranges.

In a separate bowl, sift together flour, potato starch (or corn starch) and baking powder; add the flour mix a little at a time into the dough.

Finally, add whipped egg whites.

Gently mix with a spatula from bottom up being careful not to disassemble the mixture, until you obtain a soft and homogeneous mixture.

Grease and flour a 10-inch (26 cm) cake pan with removable sides and gently pour the dough into it.

Bake in a preheated oven for about 30-35 minutes.

Cooking times vary from oven to oven. To check if it is done, insert a toothpick in the center of the cake. If it comes out clean, it’s cooked. If it’s sticky and moist, the cake isn’t ready yet.

Do not overcook the cake, otherwise it will be dry.

Allow the orange cake cool completely. Once at room temperature, sprinkle with powdered sugar if you want.

Storage

You can store Sof Orange Cake in an airtight container for up to 3-4 days, but it’s unlikely to last that long.
