Pasta with Pecorino Potatoes and Tomato is a simple and delicious pasta recipe: the sauce mixed with pecorino makes it very tasty. It is also quick and very simple to make. I cooked first the diced tomato sauce and in the meantime that the pasta was boiling I cooked the diced potatoes. Pasta with Pecorino Potatoes and Tomato recipe is easy to make.
First, peel the garlic, put it in a saucepan with the extra-virgin olive oil and brown it slightly. Add the tomato pulp sauce, season with salt and cook for about 10 – 12 minutes over low heat.
Remove the garlic, season with chopped parsley and set aside.
While the sauce is cooking, peel the potatoes, wash them and pat them with a kitchen towel (1), then cut into cubes (2) and boil in salted water until almost undone.
Boil the orecchiette (or your favorite pasta) in a pot with plenty of boiling salted water. Once cooked, drain (3) and season first with half the grated pecorino (4), then add the diced cooked potatoes (5). Heat the tomato sauce on the stove, add 1/2 laddle of cooking water then pour the hot sauce on the potatoes (6). Toss everything together.
Pasta with Pecorino Potatoes and Tomato is ready. Serve hot with the remaining grated pecorino and fresh parsley.
