Pasta al baffo

Pasta al baffo literally Moustache pasta – so called because it’s so good that you’ll end up licking your whiskers! This is a recipe the entire family will love!

You don’t have much time for cooking but you want to eat something tasty? This pasta is for you! Pasta with cooked ham, tomato sauce and cooking cream … simply yummy.

This is Luca’s (my son) favorite pasta. He says it’s delicious and I couldn’t agree more. It’s a kind of dish I usually prepare when I don’t have much time for cooking, but I want something lip-smacking. This is an easy peasy Italian recipe, perfect for a family lunch or a dinner with friends. It only takes 15 minutes: while pasta is cooking you just need to put ham in a pan, add some tomato sauce and cooking cream… here it is!

Ingredients

  • 11.5 ouncespasta (320 g rigatoni, penne or other short pasta )
  • 4 ouncescooked ham (cubed – 100 g)
  • 8 ouncestomato sauce (250 g)
  • 1 cupcooking cream (250 g)
  • 1onion (small or 1 shallot)
  • 4 leavesbasil (fresh)
  • 3 spoonsextra-virgin olive oil
  • q.s.salt (for pasta)

Directions

  1. Put on a large pot of water to boil for the pasta. Once it starts to boil, add salt and cook the pasta al dente according to the instructions on the package.

Make the sauce

  1. Meanwhile, cut the ham into small cubes (or strips if you prefer).

  2. Then peel and finely chop the onion (or the shallot).

  3. Heat the olive oil in a large pan and sauté the onion gently until it starts to soften.

  4. Now add cooked ham and let it sautè for 1-2 minutes. At this point, add tomato sauce simmer gently until it starts to thicken. It takes about 8-9 minutes. Add salt to taste.

  5. Finally, add the cream, stir to combine with the sauce and let it simmer for just a minute or two.

Finish and serve

  1. When the pasta is al dente drain it and keep some cooking water aside. Add the pasta to the sauce along with a ladle of cooking water. Mix well and let it go for a few minutes to complete the cooking.

Tips and tricks

– You can make Pasta al baffo in many other ways. For example you can make it with bacon or prosciutto crudo. If you prefer, you can also use speck instead. This recipe is delicious also with seafood.

– You can add a pinch of peperoncino and it will be more spicy.

– You can use parsil instead of basil.
