Savory Pie with Peas Cheese and Eggs, is a delicious alternative to the traditional Italian Easter Savory Pie (Torta Pasqualina), perfect for your Easter dinner table as a side dish or as a hot or cold appetizer.

This is a very simple but impressive recipe, perfect to be prepared in advance. You can bake the Savory pie completely, then chill it overnight, allowing the pie to sit at room temperature for at least one hour before serving. It can esily be packed for the Easter Monday (in Italian Pasquetta) picnic or for a picnic on the beach or in the country.

Ingredients to make the Savory Pie with Peas Cheese and Eggs recipe

1 roll puff pastry (circle)
2 eggs (for the filling)
5.5 oz peas (fresh or frozen – 150 g )
1 cup heavy cream (220 g – 7,70 oz)
1/2 cup grated parmesan cheese (2 oz – 55 g )
cheese (scamorza or caciotta or fontina to taste – 150 g)
salt
pepper
2 eggs (hard-boiled )
thyme
chive

You need:

1 Small pot
1 Egg Slicer
1 Pan

Steps

First boil the eggs. Put the eggs in a small pot with plenty of cold water and bring the water to a boil. Cook the eggs for about 8 minutes, from the moment of boiling.

Then let them cool and peel under cold water running; slice with an egg cutter (or a sharp knife) and keep them aside.

Meanwhile, cook the peas. Put them in a pan with a little olive oil and a little sliced onion, cover with water, season with salt and bring the water to a boil with the lid off.

Reduce heat, cover and cook the peas for about 8 – 10 minutes, until tender.

Beat the eggs in a bowl, add the heavy cream, mix with a fork (1), then add the grated parmesan cheese, season with salt and pepper and chopped thyme (2); mix evenly (3).

Filling and Cooking

Roll out the puff pastry and trasfer it to a round baking tray lined with parchment paper. Prick the base with a fork.

Cut the white scamorza (or the cheese you prefer – the important thing is that it is not watery) into thin slices and arrange them on the base of the pastry (4), pour over the egg and cream mixture (5) and finally sprinkle the peas evenly over the entire surface of the cake (6).

Bake in a preheated oven at 350°F (180°C) for about 30 – 35 minutes. After the first 15 minutes of cooking, add the sliced eggs to the pie and finish cooking. Take it out of the oven and serve it hot.
