Ingredients

150 g whipping cream (6 oz – cold from the refrigerator)
200 g mascarpone (8 oz – take it out of the refrigerator half an hour before)
70 g granulated sugar (3 oz – 1/3 cup)
350 g strawberries (12 oz)
1/2 lemon juice
3 tablespoons granulated sugar (for the strawberry sauce)
3 ladyfingers (or 4)

To make the Strawberry Mascarpone Cream Cups you need:

1 Bowl
1 Hand Mixer
1 Piping bag
6 Cups

Steps

Prepare the cream

First, whip lightly the whipping cream. Then, in a bowl, mix the mascarpone with the sugar with a spatula.

Then, add the whipped cream, mix gently and put it in a piping bag with a star tip (or smooth if you prefer): keep it in the refrigrator.

Prepare the strawberries

Meanwhile, wash the strawberries, pat them dry with a kitchen paper, remove the stem and place them in a bowl, cut into small pieces and combine with the juice of half a lemon and sugar and mix gently. Let sit for as much time as you have, so that there will be lots of juice at the end to soak the ladyfingers with.

Then, keep covered in the refrigerator for at least half an hour.

Assemble the cups

Now, take the cups, cover 1/3 with the mascarpone cream (1), then soak 1-2 pieces of ladyfinger in the strawberry juice and place them on the cream (2), cover with another layer of cream (3)

and finally complete with strawberries and their juice.

Increase or decrease the quantity of cream according to your taste. Leave to rest in the refrigerator, covered, until serving.

Storage

You can store the Strawberry Mascarpone Cream Cups in the refrigerator for a maximum of 1 day, even if it is preferable to consume them during the day to appreciate them at their best. I don’t recommend freezing them though.

Tips

– If you prefer, you can replace the ladyfingers with other cookies such as pavesini or pound cake: it depends on your taste and what you have at home.

– You can also prepare the cream in advance: in this case, leave the mixture to rest in the refrigerator, covered with stretch plastic wrap.

– I used small cups, but you can replace them with glasses, bowls, small jars or whatever you like.
