Meatballs and zucchini skewers in a pan are a really tasty and delicious second course.

Ingredients

450 g minced beef meat
2 sausages
2 eggs
4 tablespoons milk
100 g breadcrumbs
120 g parmesan cheese (freshly grated)
1 clove garlic (peeled and finely chopped)
1/2 onion
2 tablespoons parsley (chopped)
1 teaspoon salt
1 pinch black pepper (freshly ground)
2 courgettes or zucchini squash
1 sprig rosemary
q.s. extra-virgin olive oil
1/2 glass dry white wine

How to prepare Meatballs and zucchini skewers

Prepare the mixture for the meatballs

Place ground beef and sausages stripped of their casings in a bowl.
Add eggs, half onion finely chopped, grated Parmesan cheese, milk, bread crumbs, parsley, salt and pepper.
Mix thoroughly with your hands until the mixture is soft and works well.

If the mixture is too hard, add a dash of milk. Conversely, if it is too soft, add some Parmesan or breadcrumbs.
Season with salt and pepper if necessary.
Shape into meatballs about the size of a small tangerine and set aside.

Slice the zucchinis

Wash and trim the zucchini.
Using a potato peeler, slice zucchini lengthwise.
Line each patty with a zucchini slice.

How to cook the skewers of meatballs and zucchini

Insert 3 patties per skewer.
Heat a non-stick frying pan, pour in a generous drizzle of oil and a sprig of rosemary.
Add the skewers of meatballs and brown them well on all sides, over a gentle flame, turning them often. This will take about 20 minutes.

After that, deglaze with the dry white wine and let it evaporate completely over high heat.
Serve immediately at the table.
