Cut the potatoes and pumpkin into about 1-inch pieces after that boil them in hot salted water for about 10 minutes.
When the potatoes and the pumpkin are cooked, drain them into a bowl subsequently flavoring with salt, a pinch of pepper and the chopped sage, after that mix to combine.
Set aside and let cool.
In the meantime, in a large bowl whisk the eggs, then add milk, parmesan, salt and pepper and cheddar cheese shredded after that add the vegetables and mix to combine.
Pour the mixture into a baking dish lined with parchment paper.
Cut the sausage into pieces after that distribute it evenly over the entire surface.
Bake the Potato Frittata with Pumpkin and sausage in the oven at 180°C for about 20-25 minutes or until the surface is golden.
You can serve the Potato Frittata with Pumpkin and sausage as soon as cooked or serve cold for example cut into squares.
Keep in the fridge in an airtight container.
