11.5 ounces pasta (320 g rigatoni, penne or other short pasta)
4.50 ounces speck (120 g – sliced thin)
1/2 cup whipping cream (125 g)
1 sachet saffron
3 tablespoons extra-virgin olive oil
1/2 onion (chopped)
salt (for pasta)
3 tablespoons grated parmesan cheese


You need:

1 Pot
1 Frying Pan


First, put on a large pot of water to boil for the pasta; once it starts to boil, add salt and cook the pasta (I used rigatoni) for at least 14 minutes according to the instructions on the package. While pasta is cooking, prepare the sauce.

2- Make the sauce

Meanwhile, heat 3 tablespoons of extra virgin olive oil in a fairly large frying pan, add the onion (finely chopped) and brown it, then add the speck cut into thin strips and brown lightly.

At this point, add the cream (increase or decrease the quantity according to your tastes) and stir it with the help of a wooden spoon.

A few minutes before the pasta is completely cooked, add a ladle of cooking water to the pan with the speck and also the saffron, mix well;

finally, drain the pasta directly into the sauce (set aside some of the cooking water), add plenty of grated Parmesan and stir well. If needed, add 4 – 5 tbsp of cooking water and let it go over the heat for a few minutes, stirring rapidly.
