1) Make the focaccia dough
First, pour the water, oil and yeast in the mixer. Add the flour and start kneading. When the flour is completely absorbed, add a teaspoon of salt. Knead for about 5 minutes, until well combined, then divide the dough into 2 parts and make 4-5 folds, until the dough shows resistance.
Form 2 loaves and let them rise for about 2 hours in the oven, with the light on, until they double in volume. It could take up to 3 hours.
2) Shape the focaccia
Preheat oven to 428°F (220°C).
Punch down the dough and transfer it to a lightly oiled baking trays. Using your fingertips, gently stretch and press the dough to form a rectangle about 1/2 cm thick. Do the same with the remainig dough.
Cover the surface with stracchino and mozzarella pieces.
3) Bake the focaccia
Drizzle with extra-virgin olive oil and sprinkle with salt. Bake for 15 minutes, or until golden brown and cooked through. Let cool slightly on the baking tray.
