Here is my recipe for Italian Tiramisu, a dessert made of ladyfingers soaked in coffee, arranged in layers and filled with a mascarpone cream and eggs.

Ingredients Italian tiramisu recipe

16 ounces mascarpone (450 g)
1 pound ladyfingers (400 g)
6 eggs
1/2 cup sugar (100 g)
11/4 cup coffee (350 ml)
2 tablespoons marsala
cocoa powder

Steps Italian tiramisu recipe

First prepare the coffee, then add 2 tablespoons Marsala. If you don’t like liqueurs or are making Tiramisu for kids, don’t use it.

Separate the egg whites from the yolks perfectly. Take a bowl and whip the egg whites to stiff peaks with an electric beater on high speed, you’ll get there when the whites don’t move if you flip the bowl over.

When ready, set aside.

Now in another bowl, beat the egg yolks with the sugar until light and smooth, still on high speed.

[To pasteurise the eggs ( Place the beaten eggs with a hand whisk in a bowl suitable for cooking in a bain-marie, and heat them until they reach a temperature of 179° F (82° C) while continuing to stir. ) At this point the eggs will be pasteurised ]

Work the mascarpone in a bowl with a spoon to smooth it out and add it to the egg yolks.

Finally, add the egg whites until stiff.

Mix with a wooden spoon, from the bottom up. Mix slowly until smooth and creamy.

To make this cake, you will need a 12 x 8 inch (30 x 19 cm) baking pan for 8 people.

Now let’s go compose the cake by making layers of ladyfingers and mascarpone cream.

Quickly (1 or 2 seconds) dip the ladyfingers in the coffee. They should not be too soaked.

Arrange them to cover the bottom of the baking dish. Spread the mascarpone cream on top of the ladyfingers .

Create at least two layers of cake on the last layer, spread plenty of mascarpone cream and sprinkle with cocoa powder.

Let rest 3 hours in the refrigerator before serving the tiramisu.

Tiramisu tastes even better when prepared in advance, allowing the flavors to meld! It will keep in the refrigerator for 2 to 3 days.
