Homemade vanilla pudding for Valentine’s Day. Making homemade vanilla pudding is as easy as can be and the results are beyond delicious!

Forget about canned mixes or prepackaged pudding.

Ever since I was a little girl I have loved pudding, to this day when I visit my mum she still brings me a cup, sometimes cold and sometimes steaming hot!

Pudding has always been the perfect after-school snack or a simple dessert to keep on hand in the fridge.

Now I also bring it to the table whenever I feel like it and for the most romantic day of the year I thought of this heart-shaped version for the boyfriend, the husband or simply for all the loved ones in the family!

Ingredients Homemade vanilla pudding for Valentine’s Day

For pudding

21/2 cups milk (600 ml)
3 yolks
3/4 cup sugar (150 g)
1 pinch salt
1/8 cup unsalted butter (30 g)
1 tablespoon pure vanilla extract
2 tablespoons cornstarch (30 g)

For the caramel

1/2 cup sugar (100 g)
12/3 cup water (220 ml)
2 tablespoons cream

Steps Homemade vanilla pudding for Valentine’s Day

In a bowl, whisk ¼ cup of lukewarm milk with the cornstarch to dissolve it completely. Set aside.

In a saucepan, whisk together the remaining milk, salt and sugar. Let the mixture heat over medium heat until steaming, do not boil.

While the milk is heating, whisk the egg yolks in a separate bowl. When the milk is steaming, slowly pour in the egg yolk mixture, whisking continuously with a hand whisk, followed by the cornstarch mixture. Continue to cook over medium heat, stirring constantly, until the mixture begins to simmer and has thickened.

Remove from the heat and stir in the butter and vanilla.

Prepare the caramel

To prepare the caramel, start by putting the water in a small saucepan.

Put all the sugar in a large double-bottomed saucepan and add 3 tablespoons of water. Turn on the heat and continue to rotate the pan without using spoons until a golden caramel forms.

Remove the sugar from the heat and pour in the boiling water a little at a time, taking care not to scald yourself with splashes. Continue cooking until the caramel becomes syrupy.

Allow to cool and add the cream.

Pour into heart-shaped containers, scoop out the pudding and gently pour over the caramel.

Leave to cool for 6 hours before serving.

Once the pudding has firmed up you can turn it out onto a serving plate and add sugar hearts.
