Tagliolini with cream of smoked salmon

Tagliolini with cream of smoked salmon is a simple but great tasting first course.

A rich and creamy sauce perfectly accompanies the tagliolini, better if homemade.

Very easy to prepare, in just 15 minutes we can serve a dish that everyone will love.

With tagliatelle and pappardelle, tagliolini are a long egg pasta typical of Italian cuisine. The three types of formats differ for their width. While the ingredients are always the same in proportion of 100 g of flour and 1 egg.

Tagliolini, as opposed to tagliatelle which measure about 5-6 mm and pappardelle 12-13 mm, measure just 3 mm.

If you want to try making fresh pasta at home, I leave you the recipe I have in my blog in Italian. I have prepared the tagliatelle, but the procedure is identical for tagliolini, just cut the sheets of 3-4 mm.

Ingredients

360 g tagliolini (fresh or dried or noodles)
50 g unsalted butter
2 tablespoons extra-virgin olive oil
200 g smoked salmon
200 g heavy cream
1 tablespoon lemon zest
q.s. parsley
q.s. salt (to taste)
q.s. pepper

1 Knife

Preparation

Put a pot with plenty of salted water on the stove.

Heat the butter and oil in a frying pan (photo 1).

Cut the salmon into strips and brown it in the pan (photo 2).

Add the cream, a pinch of salt and pepper and the lemon zest (photo 3).

When the water comes to a boil, cook the tagliolini in it for 5-6 minutes (photo 4).

If using dry tagliolini or noodles, cook them according to the cooking time indicated on the box.

Drain the pasta directly into the skillet with the sauce (photo 5).

Stir the pasta to season well.

Add a sprinkling of chopped parsley and serve the Tagliolini with cream of smoked salmon piping hot.

Advice

If you see that the pasta is getting too dry, you can add some hot milk or the cooking water from the tagliolini.
Instead tagliolini, fresh or dried, you can use noodles.

How to store Tagliolini with cream of smoked salmon

You can store the salmon tagliolini in the refrigerator for up to 2 days. At the time of serving, warm them up with a dash of milk.
