Gratin onions with potatoes

What could be more delicious than onions? They are good in any way you prepare them, above all if they are gratinated into the oven. Au GRATIN ONIONS WITH POTATOES, are a quick and easy side dish to prepare. They could be served with meat, but also with cold cuts and aged cheeses, too. I used mashed boiled potatoes to give a crunchy taste to the dish.

Ingredients

  • 10onions
  • 2potatoes, boiled in distilled water, no salt
  • 3 spoonsbread crumb
  • 1 tuftparsley
  • 2 spoonsparmesan cheese
  • 1 pinchsalt
  • 1 pinchpepper
  • 4 spoonsextra-virgin olive oil

Preparation of Gratin onions with potatoes

  1. 1-Clean the onions, remove the first part of the skin and then divide them in half. Put them in a bowl with cold water for about 20′ and then

  2. 2-A bowl put the mashed boiled potato, add the parsley, parmesan cheese, salt and pepper. Mix.

  3. 3-Arrange the onions with the cut side up, on a baking sheet lined with lightly oiled baking paper. With a kitchen brush brush the surface of the onions and sprinkle with a little salt.

  4. 4-Cover each onion with the potato breadcrumbs and drizzle with more oil. Add a small glass of hot water and bake at 180° for 30′. Serve hot or cold and enjoy!
