Steps How to make Soft lemon Crinkle Cookies
First take the butter out of the refrigerator and let it soften to room temperature.
Wash the lemon and dry it then scrape the peel, trying not to get to the white part because it is bitter and unpleasant.
Let’s make the cookie dough
In a bowl, process, with a spoon, the sugar with the grated peel until all the sugar is well flavored.
Set aside.
Mix flour with sifted baking powder and pinch of salt.
In a planetary mixer, or in a bowl with electric whips, cream the room-temperature butter with the lemon-flavored sugar until soft and fluffy.
Combine the lemon juice and egg while continuing to knead.
Add the flour mix and knead. The resulting mixture will be sticky, which is fine.
Pull the dough away from the sides and bottom of the bowl with the spatula. Give the mixture a ball shape by leaving it in the bowl. Close the bowl with plastic wrap and refrigerate for one hour.
Bake the cookies in the oven or air fryer
After the resting time has passed, form walnut-sized balls with the mixture. Roll them first in caster sugar then in powdered sugar.
Place the balls on the drip pan covered with baking paper.
Bake in a preheated oven at 180°C (350°F) for about 15 minutes or until the cookie, when touched with your finger, is soft but not mushy. Do not overcook them otherwise they will be very hard when cold.
For cooking in the air fryer, bake at 170°C for about 12 minutes.
When cooked, allow the cookies to cool completely before serving.
