Ingredients

almond flour (7 ounces ALMOND flour about 200 g)
unsalted butter (1/3 pound UNSALTED BUTTER about 150 g)
sugar (1/3 pound SUGAR about 150 g)
potato starch (2,5 ounces POTATO STARCH about 70 g)
2 orange
4 egg
1 sachet baking powder for sweets
almond (sliced almonds for decotating)

Steps

STEP 1

Melt butter and allow to cool.

Separate egg whites from yolks.

Beat egg whites until stiff for about 5/10 minutes.

Put the egg yolks together with the sugar and whisk with an electric whisk for 5 minutes until the mixture is frothy and whitish.

STEP 2

Grate untreated orange peel then squeeze the juice and filter through a sieve.

Add both zest and juice to the egg and sugar mixture, then add melted and cooled butter and mix with a spoon.

Now add almond flour, potato starch and baking powder.

Mix with a spatula to avoid lumps.

Finally, incorporate whipped egg whites with gentle movements from bottom to top.

STEP 3

Pour the mixture into a greased and floured pan and level the surface.

Bake in a preheated oven at 180 ° for about 45 minutes.

Remove from the oven and allow to cool completely before removing from the pan.

Sprinkle with powdered sugar and serve.

STORAGE

The ORANGE ALMOND CAKE Caprese can be kept soft for 4 days covered with cling film.

NOTE

The oranges to prepare this cake must necessarily be untreated
