INGREDIENTS TO MAKE THE ROLL

5 yolks
egg white
140 glasses sugar
90 g flour
1 teaspoon baking powder
50 ml seed oil
50 ml milk

FOR THE FILLING

ricotta cheese
candied orange
dark chocolate (in pieces)

FOR THE GLAZE

200 g icing sugar
1 egg white
1 teaspoon lemon juices
candied cherry

HOW TO PREPARE THE SWEET ROLL

Whip the egg whites until stiff with 70 g of sugar. In another bowl, whip the egg yolks with the rest of the sugar, then add the milk and oil in a trickle, add a little at a time the egg whites stirring with a wooden spoon but be careful not to disassemble them, finally add the flour and baking powder sifted. Pour the mixture into a rectangular baking pan covered with baking paper and bake, at 180 degrees, for about 15 minutes. Meanwhile, prepare the filling. Mix very well the well drained ricotta cheese with the candied fruit and chocolate pieces. Remove the dough from the oven and turn it over a damp cloth and let it cool. Peel off the baking paper, trim the edges well and start stuffing the roll. Roll it up starting from the longest side. Now prepare the icing. Lightly whisk the egg white with the lemon juice and add the icing sugar, pour the icing over the roll and decorate with the candied cherries.
