POTATO PIZZETTE WITH HAM AND SCAMORZA CHEESE

Potato pizzas with bacon and scamorza cheese , are very easy to make, very soft and full of flavor are great to offer as an appetizer or as a tasty snack during the day. 200 g boiled potatoes
20 g brewer’s yeast
Half glass milk
flour (q.b.)
salt
1 scamorza cheese
100 g rolled bacon
evo oil

PROCEDURE

To make the potato pizzas, first you need to mash the potatoes well, put them on the work surface and form the classic hole in the center. Dissolve the yeast in the warm milk and pour it into the center of the fountain along with the salt. Start mixing, adding as you go the flour you need to get a nice soft loaf it should not be too hard, leave it a little bit sticky as well. Cover the loaf and let it rise until it doubles in size. Once the dough has risen, roll it out on a well-floured work surface, at this point, you can decide to make small round pizzettes or square tongues as I did. Once you have formed your pizzettas, place them on a well-oiled and floured baking sheet, brush them with oil and bake them at 180 degrees for about 20 minutes in all. After 10 minutes, take them out and add some bacon and a few slices of scamorza cheese to each pizzetta. Bake again and complete the cooking process. Always adjust with your oven and be careful not to overcook them otherwise they will no longer be nice and soft but just crispy. Take them out of the oven and enjoy them nice and hot and stringy. They are also delicious cold.
