EGGPLANT DUMPLINGS

2 eggplants
1 scamorza cheese
1 mozzarella
tomato

HOW TO PREPARE THE EGGPLANT

Cut the eggplant into slices, coat the slices in oil and then in breadcrumbs. Place the slices on a baking sheet covered with baking paper and bake at 180 degrees for about 7/8 minutes.

In the meantime, in a small saucepan, sauté the onion in oil and then add the tomato, season with salt and boil for about 3 minutes.

Now prepare the dumplings. Place a piece of mozzarella and provola on each slice, add a spoonful of tomato sauce and close in a half moon shape. Bake the dumplings again until the mozzarella is well melted. Remove from the oven and enjoy them nice and hot and crispy.
