Ingredients
- 2/3 poundchicken breast
- 1broccoli (cut into florets)
- 1/2onion
- 1/2 tablespoonginger (fresh, minced)
- 1 pinchlemongrass
- 1 tablespoonsoy sauce
- 1 tablespoonvegetable oil (sesame or peanut oil)
- 1 pinchsweet paprika (optional)
- salt
- black pepper

Preparation of air fryer chicken with broccoli and ginger
Cut the chicken into 1 inch pieces and put it in a bowl.
Slice the onion and put it in another bowl, together with broccoli.
In a small bowl, mix vegetable oil with soy sauce, ginger, lemongrass, sweet paprika, salt and pepper to taste.
Pour half of the mixture over the chicken, and half over broccoli and onion.
Stir well the marinade with chicken and vegetables. If you have time, let them rest 10-15 minutes.
Add the chicken to the air fryer basket and fry at 195°C (380°F) for 4-5 minutes.
Then, add broccoli and onions and mix them with chicken.
Air fry at 195°C (380°F) for 8-10 minutes, until chicken is cooked. Remember to stir halfway through cooking.
Serve chicken with broccoli warm, adding fresh lemon juice on top if you like it, or some yogurt dressing.
Notes:
Cooking time depends on your air fryer model. Try not to overcrowd the air fryer basket. If your basket is large, the recipe might cook quicker.
You can leave out the onions if you don’t like them. You can add hot sauce (1 teaspoon) to the marinade.
