Apple squares with greek yogurt

Delicious apple squares with greek yogurt, vegetable oil, cinnamon and vanilla… very quick and easy to make, they can be served as a simple dessert, even warm, with ice cream or custard. Let’s try these yummy apple cake bars, they are super moist and fragrant!

Ingredients

  • 3apples
  • 4 tablespoonsbrown sugar
  • 1 cupall-purpose flour
  • 1/4 cupcake flour
  • 1 teaspoonbaking powder
  • 1 pinchsalt
  • 3/4 cupsugar
  • 2eggs (medium size)
  • 1/3 cupvegetable oil
  • 1/3 cupgreek yogurt
  • 1 teaspoonvanilla extract
  • 1 teaspooncinnamon powder
  • lemon juice

  • Pan 9×9 or 7×10 inches

  • 3 Bowls

Preparation of Apple Squares

  1. Preheat oven to 180 C (350 F) and line your pan with baking paper, or grease it with butter.

    Peel and core the apples, then chop them into small pieces.

  2. Put the apples in a bowl and mix with cinnamon, brown sugar and a squeeze of lemon juice.

    In a separate bowl, mix together the flour (sifted), the baking powder and a pinch of salt.

  3. In another bowl, whisk white sugar, vegetable oil, greek yogurt and vanilla.

    Add the eggs and whisk the mixture until it will be very smooth.

  4. Add dry ingredients (flour, baking powder and salt) into wet ingredients. Mix them together until combined.

    Put the chopped apples in the batter and combine. You can keep aside some apples to top the cake.

    Pour the batter into the pan and top with the leftover apples.

    Bake the cake for about 45-50 minutes. To be sure, you can insert a toothpick into the center and see if it comes out clean.

    Let cool down the cake, then slice into squares and dust with powdered sugar (to taste).

    Apple squares are ready, you can serve them with custard, whipped cream or vanilla ice cream.

  7. Notes:

    You can bake the cake in a round pan and serve as a classic apple cake.

    The apple squares get even moister after the first day. Keep them in a cool place, closed in a container.
