Preparation of Fudgy brownies
Put dark chocolate into a small bowl. Place the bowl on a saucepan with some water.
Heat on low until chocolate will begin to melt. Add the butter, cut into pieces, and mix together until the mixture is blended.
Set aside and cool for 10-15 minutes.
Then, add vegetable oil, vanilla extract, a pinch of salt and granulated sugar.
Mix all the ingredients with a spoon or a hand whisk.
Add the eggs, one by one, and whisk until combined.
Mix together flour and cocoa powder, sifted. Sprinkle them on the chocolate mixture, and fold until just combined (try not to over mix the batter).
Line the baking pan with parchment paper, then pour the batter and spread it to all sides, using a spatula.
Sprinkle all over with the chocolate chips (refrigerated).
Transfer the pan to the oven, at 350°F. Bake for 30-35 minutes, until a toothpick inserted comes out with a few crumbs attached.
Let the brownies cool completely, then slice into squares (4×4), serve and enjoy!
Leftovers con be stored in a container for up to 3 days, at room temperature.
Notes
It is better to use good quality chocolate (and chocolate chips), I used dark chocolate with 60-65% cocoa.
Try not to bake brownies too long. They will continue to firm up as they cool.
If you have a 9×9 baking pan, bake the brownies 5 minutes less. They will be thinner but still delicious.
