Tools
Steps
Soak the raisins in a bowl with warm water.
Clean the sprouts by removing the outer leaves if damaged, then wash them well. To facilitate cooking, I suggest you to make a cross incision on the base with the tip of a knife.
Boil the sprouts in boiling salted water for about 8 minutes. Drain them and let them cool.
Cut the sprouts in half, transfer them to a bowl and season with salt, pepper and extra virgin olive oil.
Squeeze and dry the raisins, roughly chop the almonds.
Add almonds and raisins to the sprouts, then mix together.
Cover a large pan with parchment paper and place the sprouts on it, trying not to overlap them.
If you like, you can sprinkle with brown sugar (it will make them more caramelized during cooking).
Put the sprouts in the oven at 375° and cook them for about 15 minutes. If you like them a little more browned, you can activate the oven grill in the final minutes.
The brussels sprouts with almonds and raisins are ready to be served… enjoy your meal!
Notes and variations
Boil the sprouts adjusting the times to your taste, if you like them more consistent you can drain them after 5-6 minutes.
You can replace the almonds with pine nuts or peeled hazelnuts.
You can add cubes of smoked or sweet bacon.
