These pesto puff pastry bites are really simple, with very few ingredients: provola cheese, sun dried tomatoes, pesto and fresh basil leaves. They are quick and easy to prepare, and they can be a perfect appetizer even for the Christmas table! Try the pesto bites, they are very simple and yummy!

Ingredients
- 1 packagepuff pastry (ready to be used)
- 1egg (lightly whisked)
- 2.5 ouncesprovola cheese (or mozzarella)
- 2 tablespoonspesto sauce
- 7dried tomatoes in oil (chopped into pieces)

Preparation of pesto puff pastry bites
Preheat the oven to 190C / 380F and line a baking tray with baking paper.
Unroll the pastry and brush with egg wash.
Slice the pastry in half width-ways and place one half on top of the other, so you will have two layers of pastry, as you can see in the photo.
Cut the pastry into squares, 4 by 7 or 4 by 6, depending on the size.
Place the squares on the baking tray and bake for 10-11 minutes. Then take them out of the oven.
Slice the provola cheese into cubesĀ and place one or two pieces on top of each square.
Place the tray back in the oven for 2-4 minutes, until the provola will melt.
Take the puffs out of the oven and top each one with some drops of pesto and a piece of tomato (well dried from the oil).
Decorate each puff with fresh little basil leaves. Place your pesto puff pastry bites on a plate and serve hot or warm.
Notes:
Instead of provola, you can try mozzarella or other meltable cheese, such as gouda or cheddar.
You can use gluten free puff pastry.
If needed, you can cook ahead the pastry squares with egg wash only, then reheat them adding provola and finishing with pesto and dried tomatoes.
