Traditionally, panna cotta is set in individual molds and then turned out onto a plate. However, for a much simpler (and often more impressive) presentation, you can serve it directly in elegant glass cups or small bowls, as I have done. This method is practical, foolproof, and highly decorative.

The preparation is truly straightforward, and I guarantee you’ll stop buying store-bought versions once you try this.

Ingredients

400 ml heavy creamBuy (1 3/4 cups or 13.5 oz – use high-fat whipping cream.)
120 g pistachios cream (1/3 cup or 4 oz – use a fine paste or creamy spread)
80 g granulated sugar (1/3 cup or 2.8oz – omit if using pre-sweetened cream)
3 sheets gelatineBuy (5g – alternatively, use 1 scant packet of powdered gelatin (approx. 2 tsp)

For Topping & Decoration (To Taste)

q.s. chopped pistachios
q.s. chocolate topping (syrup or melted chocolate)

Steps

1) Soak the Gelatine

First soak the sheets of gelatine into a bowl filled with very cold water for about 10 minutes, until they are completely soft and pliable. This process activates the gelatine.

2) Warm the Cream Base

In a small saucepan, gently combine the heavy cream and the sugar (if adding it). Heat the mixture slowly over a low flame. Crucially, do not let it boil. The cream only needs to be steaming hot enough to easily dissolve the remaining ingredients.

Once the cream is hot, remove the pan from the heat. Stir in the pistachio paste/spread. Whisk the mixture vigorously until the paste is completely melted and evenly distributed, resulting in a beautiful, uniform green liquid.

3) Add the gelatine

Take the softened gelatine sheets out of the water and squeeze them firmly to remove all excess liquid. Add the squeezed gelatine directly into the warm pistachio-cream mixture. Whisk robustly to ensure the gelatin dissolves perfectly and leaves no residue or lumps.

4) Cooling and Rest

Pour the prepared panna cotta mixture into your chosen serving glasses or individual dessert molds. If using metal molds, it’s a good idea to moisten them slightly first.

Let the desserts cool down to room temperature for about 30 minutes. Afterward, transfer the portions to the refrigerator and allow them to chill for a minimum of 4–6 hours, or preferably overnight, until they are entirely set and firm.

5) Garnish and Serve

Once the panna cotta is solid, decorate it just before serving. Finish the dessert with a generous scattering of chopped pistachios and a final, decadent drizzle of chocolate topping.

If you used molds and wish to unmold the panna cotta, quickly dip the bottom of the mold into a bowl of hot (not boiling) water for 3-5 seconds. This will loosen the edge, allowing you to invert the dessert easily onto a serving plate.

Storage

Frequently Asked Questions (FAQ)

Can I use cooking cream (panna da cucina)?

No, it is not recommended. Cooking cream has a lower fat percentage. To achieve the rich, firm, and velvety consistency characteristic of panna cotta, you must use fresh liquid cream (heavy cream) with a high fat content.

Can I replace gelatin with agar-agar?

Yes, but the quantities change. Agar-agar is a much stronger vegetable thickener. Generally, you should use about half the dose of agar-agar. It also needs to be added while the liquid is boiling (not just warm) to activate properly.

Can I use whole milk instead of cream to make it lighter?

Technically yes, you can substitute part of the cream with milk, but you will need to slightly increase the amount of gelatin (or agar-agar). Keep in mind that using more milk will result in a less rich and less creamy final texture.

If I use pure pistachio paste instead of pistachio spread, do I need more sugar?

Most likely, yes. Pistachio spread is already sweet and fatty. Pure pistachio paste is often unsweetened and much more intense, so you will probably need to adjust the sugar content upward to taste.
