And yes, because objectively it tastes like cardboard and if you can’t cook it in a delicious way you just can’t stand it! But in today’s recipe we will overlook the classic recipe of grilled chicken breast and cook it with tomato and mozzarella, for a delicious result!

This breaded chicken breast, cooked in the oven a is very soft, tasty, has a slight breading at the edges, while in the center with the tomato, oregano and mozzarella, it becomes really moist and delicious!!

Ingredients

2.5 pounds chicken breast
7 ounces breadcrumbs
14 ounces tomato pulp
2 ounces parmesan cheese (or grana cheese)
q.s. salt
q.s. olive oil
q.s. oregano (dry)
10 ounces mozzarella
q.s. parsley
q.s. pepper

Chicken cutlets with tomato and mozzarella: step by step…

Collect the chicken in a bowl, add a generous amount of oil, a pinch of salt and pepper and stir.

Prepare a breading with breadcrumbs, grated cheese and parsley, mix everything and pass each slice on the breadcrumbs.

Cook the tomato pulp until it thickens, add salt and if needed sugar. At the end of cooking, add a drizzle of oil.

Chicken cutlets with tomato and mozzarella

Spread the tomato sauce over the meat and cook for about 7 minutes in a ventilated oven at 355 º C.

Bake, spread over the mozzarella and oregano, put back in the oven for another 8-10 minutes.

Bake and serve still hot and stringy.
