Chicken breast with mozzarella and tomato

Delicate and fragrant, the chicken breast bits with mozzarella, tomato sauce and oregano, is a dish of unique simplicity, but with an exceptional taste.

Tired of preparing the usual grilled meat dish in the pan, I wanted to propose new and tasty ideas that allowed me to cook chicken breast so that it remains moist, succulent and inviting. Some time ago, for example, I prepared this very simple second dish that my children ate in an instant, cleaning it with bread until it looked like it was just washed.

Ingredients

2 pounds chicken breast
2 carrots
1 onion (medium)
2 celery (stalks)
1/2 glass white wine
q.s. salt
q.s. olive oil
10 ounces tomato puree
7 ounces mozzarella
q.s. oregano

Steps

To make this dish you can use some tidbits, rags or even slices of chicken breast whole.

Chicken pizzaiola with mozzarella and tomato, preparation:

Peel the onion and carrots and cut into very small cubes, do the same with celery.

Collect in a large pan and browned with olive oil.

Cut the chicken however you prefer, I chose bits since during the cooking they remain softer. Add the chicken to the vegetables and brown them.

When the chicken’ll be well cooked and browned, pour the wine, let it boil over high heat and add the tomato sauce.

Cover and cook for 20 minutes over medium heat.

Then remove the lid and let the sauce shrink over a high flame.

Once the sauce has shrunk, add the diced mozzarella cheese (you can use the pizza mozzarella in brick, as long as it of good quality) and the oregano, put on the lid, let cook a few more minutes and turn off.

Let it rest for ten minutes and bring to the table.
