Prepare Quick puff patry (pasta matta)

  • 1.75 cupsflour (all purposes type 00, 1+3/4 cups, gr. 200)
  • 1/2 cupwater (ml. 130)
  • 1.5 spoonsolive oil (gr. 20)
  • 1 pinchsalt (fine)

Prepare the meatloaf

  • 1.3 poundsminced meat (mixed bovine and pork, gr. 600)
  • 0.7 poundssausage (fresh italian, gr. 300)
  • 0.2 poundsbread (white and sliced, gr. 90)
  • 1 cupparmesan (grated, gr. 90)
  • 1/3 cupmilk (gr. 100)
  • 0.8 poundsgruyere (gr. 350)
  • 10 slicescooked ham (thin, 0,5 pounds, gr. 250)
  • 2 pinchessalt (fine)
  • 2eggs

Preparation

    Below you can find the steps of the recipe:

    On a work surface pour the flour, make a well in the center and slowly add the water. After that, add the olive oil and the salt.

    Knead for 5-10 minutes, adding flour on the surface if necessary, the dough should be soft, smooth and elastic. Cover the dough surface with little flour, wrap it in plastic and cover it with a cup, so it won’t dry out.

    Let it rest at room temperature for about 30 minutes before attempting to roll it out.

Prepare meatloaf

  1. Here you are the ingredients: minced meat, fresch sausage, eggs, sliced ham, gruyere, sliced bread, grated parmesan cheese.

  2. In a large bowl mix together minced meat and sausage (remove the casing and break into small pieces) with a fork or with your hands.

    In another bowl, crumble the sliced ​​bread with your hands and add the milk. Let it soak for a few minutes.

  3. Add the soaked bread, grated Parmesan, eggs, salt to the meat and mix until just combined.

  4. Flatten meat mixure between two sheets of waxed paper (or parchment paper or heavy-duty foil), pat it with the hands or with a rolling pin into a 14×15 inch. rectangle (35×37 cm.).

  5. With an old potato peeler or a knife cut the piece of gruyere in thin slices (you can also use sliced cheese).

  6. Cover the meat with the first layer of cheese, then the ham, another layer of cheese and finally the ham. Cover with a layer of grated gruyere cheese.

  7. Roll it up, jelly-roll style, with the help of waxed paper, beginning with the long end and peeling paper away while rolling. Cut the roll into two parts.

Prepare the mummy

  1. On a floured surface, roll out the dough with a rolling pin, not to thin. With a pizza wheel, cut the Savory pie crust into strips about 0,6 inch wide (cm. 1.5).

    With these strips, roll up the meatloaf trying to remember the shape of a mummy.

  2. To prevent the puff pastry from burning, cover the meatloaf with parchment paper. Cook at 390 F (200 ° C) for 45/50 minutes, placing it on the second shelf of the oven starting from the bottom.

  3. Uncover the meatloaf and brown for a few minutes.

    For the white part of the eyes I used a thin slice of cheese with a juniper berrie (or pepper in grain). Add the eyes when the meatloaf is warm.

Suggestions

In place of waxed paper you can use parchment paper or heavy-duty foil

You can also use sliced swiss cheese or replace gruyere with cheddar.

It is possible to use bread crumbs in alternative to the sliced bread.
