Fried zucchini Parmigiana

Fried zucchini Parmigiana is a variant of the more famous Eggplant Parmigiana. is a bit long to prepare, but the resulting taste is truly unique and it will be worth all the effort made to cut and fry the zucchini. I love it and I think that you should try to cook this fantastic recipe. I usually fry a few more zucchini, you will see that they will be snapped up!

Ingredients

Prepare the sauce

  • 2 cupstomato puree (ml. 500)
  • 1onion (yellow)
  • 1 teaspoonsugar
  • 1 pinchsalt (fine)
  • 1carrot
  • 2.5 spoonsolive oil (gr. 30)

Prepare zucchini

  • 1 poundzucchini (gr. 500)
  • 1.3 cupsflour (gr. 150)
  • 3 pinchessalt (fine)
  • 1.5 cupsseed oil (gr. 300)

Assembly Parmigiana

  • 5.3 ouncescooked ham (sliced, gr. 150)
  • 1/2 poundmozzarella (cheese, gr. 250)
  • q.s.parmesan (freshly grated)

Preparation

Prepare sauce

  1. In a saucepan put a the olive oil, the onion and carrot cleaned and finely chopped. Fry for a few seconds, add the tomato puree, the salt, the sugar and cook for about 40 minutes, stirring often. During cooking, season with salt and sugar if necessary.

Prepare zucchini

  1. While the sauce is cooking, wash the zucchini, cut them into thin slices with a mandolin, a potato peeler or a knife.

    Salt them lightly and then flour them well. The quantity of flour is indicative, it depends on how much will be absorbed by the zucchini.

  2. Put the seed oil in a pan. Once hot, add the floured zucchini at a time and cook until golden brown.

    Remove them from the pan and place them on a plate covered with absorbent paper to remove excess oil.

    Continue like this with all the slices of zucchini. If the oil is not enough, add more oil and cook the zucchini only when it is hot. You can salt the fried zucchini and taste them, they will be deliciuous.

Assembly Parmigiana

  1. Sprinkle with a little sauce the bottom of a square pan with side 8 inches (cm. 20), place the fried zucchini slices making a first layer, then again a layer of sauce on top and after a layer of ham.

  2. Go on with the diced mozzarella cheese.

    Now make a new layer of zucchini, then the sauce, ham and mozzarella cheese.

    Continue again with a layer of zucchini and finally cover with the sauce and a generous sprinkling of grated Parmesan cheese.

    Bake at 350° F (180° C) for about 30 minutes.

Note and suggestions

To fry zucchini the temperature of the oil should be around 340°-350° F (170°-180° C)

Fried Parmigiana zucchini will be delicious also the next day, reheated
