Baked Cornflakes Crispy Chicken

  • 1.3 poundschicken thighs (and upper thights bone-in, gr. 550)
  • 2.5 tablespoonsmayonnaise (2+1/2 cucchiai)
  • 1 tablespoonparmesan (cheese grated, 1 cucchiaio)
  • 1.5 tablespoonschicken (hot chicken sauce, 1+1/2 cucchiaio)
  • 1/2 teaspoonthyme (dried, 1/2 cucchiaino)
  • 3 sprigsrosemary (3 rametti)
  • 1/2 teaspoononion (dried, 1/2 cucchiaino)
  • 1.5 tablespoonssoy sauce (1+1/2 cucchiaino)
  • 1/2 teaspoononion (dried, 1/2 cucchiaino)
  • 1 clovegarlic (1 spicchio )
  • 3 tablespoonskefir (plain, 3 cucchiai)
  • 1 pinchsalt (fine, 1 pizzico)
  • 1 pinchpepper (ground, 1 pizzico)
  • q.s.olive oil (q.b.)
  • 1 cupcornflakes (gr. 80)


  1. Here you are the ingredients.

  2. Preheat oven to 350° F (180°C).

    Remove the skin from the chicken thighs, trim them of fat and divide them in two parts. (you can also buy chicken thighs already skimmed and trimmed).

    Add deep cuts along the thighs length.

  3. Squeez garlic with a garlic press.

  4. In a bowl stir together mayonnaise, dried onion, rosemary needles, salt, grated parmesan, dried thyme, hot chicken sauce, soy souce, squeezed garlic, ground pepper and plain kefir.

  5. Spread the mixture on the chicken and inside the cuts, let it sits for 5 or 6 hours into the fridge to marinate.

  6. Place parts of cereals in a shallow dish, lay down the chicken and cover it with the rest of cereals.

  7. Transfer it in a lightly greased 10′ (26 cm. diameter) baking dish placed on the second shelf of the oven starting from the bottom.

    Bake the chicken for around 1 hour covered with aluminum sheet.

  8. After that time, remove the aluminum sheet and let brown the surface for 15-20 minuts (move the baking dish on the higher shelf of the oven).

  9. Be careful not to let it burn


Kefir is a fermented milk drink that has a sour flavor, similar to yogurt. You can find it in the dairy section of the supermarket, usually is near yogurt.

You can replace it with yogurt thinned with milk : in this recipe you can use 2+1/2 tablespoons of plain yogurt thinned with 1/2 tablespoon of milk

The Baked Cornflakes Crispy Chicken will be delicious also if you replace cornflakes with couscous.

A substitute of Hot Chicken sauce could be your favourite spicy sauce.
