SOFT COOKIES WITH PUMPKIN AND WALNUTS

250 g flour
100 g pumpkin
80 g sugar
50 ml sunflower oil
1 egg
Half baking powder
bitter cocoa powder
powdered sugar
60 g walnuts

HOW TO MAKE SOFT COOKIES WITH PUMPKIN AND WALNUTS

Blend the pumpkin with the oil in a blender; a cream will form. Put the flour in a bowl with the sugar and add the egg, mix with a fork, then add the blended pumpkin, baking powder and walnuts. Mix everything well, the dough will be a bit mushy cover it and let it rest one hour in the refrigerator. After resting, take small pieces of dough, form into a ball and dip it first in powdered sugar and then in cocoa. Arrange all the cookies well spaced apart on a baking sheet lined with baking paper. Bake, at 180 degrees for about 15 to 20 minutes. Remove from the oven and let them cool before enjoying.
