PROCEDURE

Wash the potatoes very well with all their skin and slice them with a mandoline. Put the potatoes in a bowl and season with oil, salt and rosemary and if you like a pinch of pepper. Mix well and then arrange them in a radial pattern on a baking sheet covered with parchment paper. Bake at 180 degrees for about 30 minutes. Always adjust with your oven. Remove from the oven and enjoy them hot and crispy.
