LEMON AND ALMOND CAKE

The lemon and almond cake, is a fragrant sweet very soft but above all very simple and fast to make. If you do not have electric whips no problem because, to make the lemon cake and almonds, you only need a mixer or a blender, you just need to insert the ingredients and blend everything. I love this method of making cakes it’s super easy and the cakes are super soft. The lemon is used with all the peel, in fact you have to get organic lemons. The ricotta cheese makes it soft and moist at the right point but, the thing I like most about this cake is the crunchy note of almonds. In short, a perfect mix. 3 eggs
300 g flour
1 sachet baking powder
1 lemon
180 sugar
60 g seed oil
80 g milk
100 g ricotta cheese
40 g almond

1 lemon juice

PROCEDURE

To make lemon and almond cake, blend the lemon cut into pieces and with all the peel together with the sugar and almonds. Add the eggs one at a time then the oil, milk, ricotta cheese and finally the flour with baking powder. Pour everything into a baking pan (I used a 25 cm pan) covered with baking paper or buttered and bake at 180 degrees for about 35 minutes. Always adjust with your oven and do the toothpick test. Meanwhile, prepare the icing. In a bowl, pour the lemon juice and start adding the powdered sugar as much as you can until you reach a fairly thick consistency. Strain, pour the glaze over the bundt cake and sprinkle with powdered sugar. I also decorated with thin slices of lemon. Real goodness!!!
