220 g flour
90 g sugar
2 eggs
100 g ricotta cheese
Half sachet baking powder
Half lemon (with peel)
sugar (for dusting)

1 tablespoon sugar
1 tablespoon liqueur

PROCEDURE

To make the lemon castagnole, you must first prepare the water. In a saucepan, boil the water with the sugar, let it cool down and add the liqueur and keep it aside.

Blend the lemon with the sugar, pour the mixture into a bowl and add the eggs, ricotta and finally the flour with baking powder. The dough will be very soft let’s say soft. Heat the oil very well and, with the help of two teaspoons, make some small piles and dip them in the boiling oil. Cook the castagnole on both sides. Once you dip the piles into the oil, if they will become a nice swollen ball, then the consistency of the dough is perfect, but if they will turn into a pancake or will form cracks, it means that you will have to add in the first case a little more flour and in the second case a little milk, so do a test. Drain them on absorbent paper and, once you have finished frying, pass them quickly in the water and then in the caster sugar. Enjoy them hot but they are also delicious cold.
