CRISPY CHICKEN WITH MASHED POTATOES

A simple and tasty second course ready in a few minutes, a dish that everyone likes young and old. To make this chicken more tasty are the crispy mashed potatoes. are a real treat!!! Chicken is one of our favorite dishes especially baked chicken thighs with fennel and clementines but this crispy chicken with mashed potatoes is fabulous. INGREDIENTS:
CHICKEN BREAST
2 eggs
breadcrumbs
salt
pepper
rosemary
potatoes
you decide the quantity

PROCEDURE:
Cut the chicken breasts into strips , dip them in the egg and then in the breadcrumbs. Cook the potatoes for a few minutes in boiling water, they should not be overcooked, they will be ready when the fork will pierce. Drain them and let them cool. Once cold, mash them with all the peel with your hand. The potatoes will take a shape. Place the mashed potatoes and chicken strips in a baking dish covered with baking paper, season with salt and pepper, rosemary and oil. Bake at 190 degrees for about 40 minutes but adjust with your oven and consider that the potatoes should be nice and crispy.
