Preparation
Clean the mushrooms and cut them into small pieces.
Heat a drizzle of olive oil and a clove of garlic in a large pan. Add the mushrooms, salt lightly, and cook for 5 minutes, until they begin to sweat down.
Add the flour, stir and cook for 1-2 minutes to incorporate.
Pour some broth, reduce heat and stir until the sauce will slightly thicken.
Meanwhile, cook pasta according to the directions, until al dente.
At last, add cream cheese to the sauce and pour some pasta water (or broth). Season with black pepper, thyme and oregano to taste.
Drain pasta, reserving 1/4 – 1/2 cup of water.
Add pasta to mushroom creamy sauce and toss to combine on medium heat. Add a little pasta water as needed.
Creamy mushroom pasta is ready… you can add some fresh herbs on top just before serving.
Notes:
You can use butter (about 2 tablespoons) instead of olive oil.
You can mince garlic if you like the taste.
You can use sour cream or mascarpone instead of cream cheese.
