Turkey bruschetta

Usually there is a lot of food at Thanksgiving, and then we have lots of leftovers. One thing we almost always have leftovers is turkey. There are so many yummy recipes that can be made with leftover turkey, but today I want to share with you a very simple and quick recipe! Turkey bruschetta is tasty and easy to make, with Dijon mustard, dried tomatoes, capers and basil leaves… let’s try it!

Ingredients

  • 2 slicesbread
  • 6 ouncesturkey breast (roasted, leftover)
  • 1 tablespoonDijon mustard
  • 2 tablespoonsmayonnaise
  • 4dried tomatoes in oil
  • 1/2 tablespooncapers
  • olive oil
  • basil

Tools

  • Grid or toaster
  • Bowl
  • Chopping Board

Preparation of turkey bruschetta

  1. Cut the turkey into stripes, or pieces.

    Wipe the tomatoes from oil, and cut them in 2-3 pieces.

  2. Mix in a small bowl the Dijon mustard with the mayonnaise.

    Rinse the capers from salt.

  3. Toast the bread on both sides, using a grill or a toaster.

  4. Put the toasted bread on a plate and spread the slices with mustard and mayonnaise.

    Arrange on bread the turkey, dried tomatoes and capers.

  5. leftover turkey sandwich

    Top with some basil leaves and sprinkle with olive oil, to taste.

    Serve turkey bruschetta warm, or room temperature… and enjoy!

  6. Notes:

    You can add some garlic, spices like paprika or chili, and black olives.

    You can use fresh cherry tomatoes instead of dried tomatoes.

    If you don’t have leftover turkey, you can use chicken breast, grilled or roasted.

    You can use many types of bread, Italian, baguette or sandwich bread.
