Kebab

The kebab is something truly amazing in my opinion.

A pita roll that contains an infinite amount of flavors and smells really wonderful.

For me it is undoubtedly a comfort food, it takes me back in time and fills me with good memories that I will always carry with me.

Back then I used to buy it from the various kebabbari (technical Italian term 😂😂😂😂) around the city, nowadays instead I make it myself at home and even the way the meat is put in the cooking process is fun to watch. 😁😁😁

For the filling, besides the meat, you can really indulge in many ingredients.

Personally, my favorite is with a spoonful of my Mayo veg al brandy (find the recipe on my blog in Italian), a few salad leaves, grilled red onion, a few tomato chunks and a few drops of tabasco.

But don’t hold back your imagination, you can add as many ingredients as you like!

There is no salt in the recipe, I find that between the mayonnaise and the other ingredients the meat gets the right flavor.

Ingredients to Kebab

8 slices chicken breast
8 slices veal
2 white onions (very big)
1 red onion
q.s. mixed salad
1 tomato
q.s. Tabasco® sauce

Tools to Kebab

3 Skewers
Chopping Board
Knife
Baking paper
Baking Tray
Grill

Steps to Kebab

▪ Make the pita bread following my recipe.

▪ In the time it takes for the pita to rest you will have prepared and cooked everything to stuff them….

▪ Preheat oven to 428° in fan mode.

▪ Cut the white onions in half in a linear fashion for them to be stable and place 3 halves with the cut side down on the baking tray.

▪ Insert a skewer into each half onion, leaving the tip side up upwards.

▪ Now take the meat slices and thread them onto the skewers, alternating them.

▪ Try to position them so that the “tower of slices” is as stable as possible and does not collapse.

▪ Bake by placing the pan on the lowest rack of the oven so that the top does not burn.

▪ When there are about 10 minutes left until the end of cooking, start grilling the the red onion (you can also add the leftover half of the white one) and dice the tomato.

▪ Just before removing the “tower” from the oven, bake the pita bread.

▪ Once the meat is baked, all that remains is to cut directly from the “tower of slices” with a very sharp knife, just as you do from the cylinder of meat at the kebab shop.

▪ Now take a pita, put a spoon of mayonnaise, a few salad leaves, freshly cut meat, grilled onions, tomatoes and a few drops of tabasco sauce.

▪ Kebab is ready!
