Mini vegan cakes in the peel are one of those desserts that are as good as they are easy to make, that usually last a very short time because they are like cherries, one pulls the other….

The orange peel gives a fantastic aftertaste that balances all the flavors perfectly.

The chocolate chunks, then, give that feeling of culinary enjoyment that sends you into ecstasy.

I discovered aqua faba relatively late in life, but since then I always enjoy using it in recipes, even those where you would never say it would fit and usually the recipe turns out really good.

Ingredients to Mini vegan cakes in the peel

6.7 oz aqua faba
5.2 ounces Self raising flour
5.2 ounces dark chocolate
7 ounces brown sugar
5 oranges
q.s. powdered sugar

Tools to Mini vegan cakes in the peel

Chopping Board
Knife
Electric hand mixer
2 Bowls
Sieve
Spatula
Rolling pin
Juicer
Plastic freezer bag
Aluminum

Steps to Mini vegan cakes in the peel

▪ Preheat oven to 392° in fan mode.

▪ Cut the oranges in half and squeeze them being careful not to break the peel (the juice is excellent

to drink while preparing the recipe…).

▪ Line the outside of the peels with aluminum foil so they don’t burn during cooking.

▪ Start whipping the aqua faba with an electric hand mixer.

▪ When it begins to become firm, add the brown sugar a little at a time and continue until it becomes very firm.

▪ Add the sifted self-raising flour to the aqua faba and mix with a spatula from the bottom up

incorporating air and not disassembling the mixture.

▪ Put the chocolate in the freezer bag and pound it with a rolling pin until you have about 0.1 inch

pieces.

▪ Add the chocolate to the mixture, always stirring gently.

▪ Divide the mixture into the orange peels and bake for 30 minutes on the second to last rack of the

oven.

▪ Once cooked you can serve them either hot or at room temperature dusted with powdered sugar.

▪ Mini vegan cakes in the peel are ready!
