To prepare the peach and feta salad I used nectarines, which have a fairly compact flesh and a smooth and tasty skin. In this case, therefore, you can leave them with the peel. Wash them, dry them and cut them in half. Remove the stone, then cut them into thin slices
Wash and dry the rocket, break it up with your hands and put it in a large salad bowl. Add the peaches and season with a pinch of salt and 3 tablespoons of extra virgin olive oil.
In a non-stick pan, briefly toast the sesame seeds: about a minute on medium heat is enough, always checking them because they are easy to burn.
Cut the feta cheese into cubes and add it to the salad, mixing well to distribute it evenly. Finally, add a drizzle of balsamic vinegar and the sesame seeds to the peach salad. Serve the peach and feta salad immediately.
Tips and variations
You can also add nuts to the peach salad: walnuts or pecans are fine, but so are pine nuts. As an alternative to sesame you can use other oilseeds, such as sunflower seeds.
