First, wash the celery and pat it dry with a kitchen towel, taking care to remove the filaments; cut it into thin pieces. Place the cheese on a cutting board and cut it into cubes with a sharp knife. Then, shell the walnuts and, with your hands, cut them into pieces, not too small. Don’t use the mixer or they’ll be too much thin.

After, put the celery, the chopped cheese and the walnuts into a serving bowl and season with salt, a pinch of pepper, extra virgin olive oil and mix well with a spoon. Store in the refrigerator until ready to serve.
