You only need three ingredients for this delicious and tasty dish, with a delicate flavour. Perfect as an appetizer, a side dish or as a main dish. Everyone will love it, adults and children.

I used an excellent toma from my area, the Langhe (in Piedmont), with a soft but compact consistency. If you don’t find it, you can replace it with a fresh cheese, such as primo sale or Asiago. Try it and it will surely win you over at first taste.

6 stems celery (possibly green)
1 piedmontese toma (or other type of fresh cheese such as Asiago or Primo sale)
10 walnuts
q.s. extra-virgin olive oil
q.s. salt
q.s. white pepper
3 cherry tomatoes (to decorate)

Steps

First, wash the celery and pat it dry with a kitchen towel, taking care to remove the filaments; cut it into thin pieces. Place the cheese on a cutting board and cut it into cubes with a sharp knife. Then, shell the walnuts and, with your hands, cut them into pieces, not too small. Don’t use the mixer or they’ll be too much thin.

After, put the celery, the chopped cheese and the walnuts into a serving bowl and season with salt, a pinch of pepperextra virgin olive oil and mix well with a spoon. Store in the refrigerator until ready to serve.
