Tuna Stuffed Tomatoes with mayonnaise, hard-boiled eggs and anchovies. Quick and easy, these delicious tomatoes stuffed with tuna are great served as an appetizer or for a quick lunch or dinner. For a lighter version, you can simply use Greek yogurt instead of mayonnaise.

Very quick to make, this is a recipe you’ll make again and again. I love tomatoes and this is one of my most-loved recipe with this vegetable.

You can prepare them in advance and refrigerate: they will last in the fridge for 2 – 3 days.

Ingredients

4 tomatoes
3 ounces mayonnaise (75 g)
4 anchovies in oil
5 ounces tuna in oil (150 g)
1 tablespoon capers
2 eggs
salt
pepper
thyme

Steps

Tuna Stuffed Tomatoes recipe is easy to make.

First, boil the eggs. Put the eggs in a saucepan with plenty of cold water and bring the water to a boil. Cook the eggs for about 8 minutes, from the moment of boiling.

Then let them cool and peel under cold water running.

While cooling, wash the tomatoes and cut the tops off.

Empty them completely with the help of a teaspoon, season with a little salt, turn them upside down on a plate and allow them to drain while preparing the filling.

Tuna Stuffed Tomatoes

Once cold, mix the eggs in the mixer together with drained tuna (the more oil that you can drain off the better is), a tbsp of capers and 4 anchovies.

Pour the mixture into a bowl and add the mayonnaise, mix well. Season with salt, pepper and thyme.

Mix everything to obtain a homogeneous mixture, then stuff the tomatoes and garnish with a few mint leaves (or basil). Refrigerate for at least an hour and serve.
