Soft Focaccia Bread

Soft Rosemary Focaccia Bread: Fluffy and Airy Like a Cloud

There is something deeply therapeutic about sinking your fingers into a soft, living dough that smells wonderful even before it hits the oven.

Making homemade focaccia is more than just a recipe; it’s a ritual that turns your kitchen into the coziest place on earth. Imagine that unmistakable scent of fresh rosemary and high-quality olive oil spreading through your home, drawing everyone to the kitchen before the tray is even ready.

This version is dedicated to those slow Sundays, shared snacks, or family dinners where bread becomes the true star of the table.

The secret to this Soft Focaccia Bread isn’t in complicated techniques, but in respecting the rising times and using a generous brine (salamoia). This dough only asks for a little rest to reward you with an incredible, almost ethereal softness and a spongey heart.

It is the perfect “blank canvas.” Try serving it warm, sliced open and stuffed with high-quality mortadella or a creamy cheese that melts on contact.

Every bite is a simple pleasure that reminds us how little it takes—flour, water, and passion—to make an ordinary day special.

👨‍🍳 Step-by-Step Instructions

The Dough:

Crumble the yeast into the water and stir until dissolved. Using a stand mixer with a dough hook, mix the flour with the yeast water on low speed. Add the salt, then slowly pour in the olive oil. Knead for about 10 minutes until the dough is smooth and elastic.

First Rise:

Lightly oil your work surface and shape the dough into a smooth ball. Place it in a bowl, cover with plastic wrap, and let it rise for 2 hours in a warm, draft-free spot.

Pan Prep & Second Rise:

Generously oil a high-sided baking pan (at least 5cm deep). Place the dough in the center and gently stretch it with your fingertips to cover the entire surface. Cover and let it rise for 1 more hour (ideally in an oven with the light on, around 25°-28°C).

Dimples & Brine:

Vigorously whisk the 30ml oil and 15ml water in a small bowl to create an emulsion. Use your fingertips to press deep dimples into the dough. Pour the brine evenly over the top, then sprinkle with rosemary and flaky salt.

Baking:

Bake in a preheated static oven at 200°C (390°F) for 40 minutes. Once golden, let it cool slightly before removing from the pan. Serve warm!

💡 Ingredient Notes & Tips

The Flour: For a stronger structure, swap 100g of all-purpose flour for bread flour (Manitoba).
The Oil: Use the best extra virgin olive oil you have; since it’s a main ingredient, the quality makes a huge difference!
Variations: Try adding halved cherry tomatoes or black olives into the dimples before baking. It’s also amazing stuffed with prosciutto crudo and soft cheese.

🍱 Storage and Reheating

Keep in a paper bread bag for 1-2 days. You can also freeze it once baked; just reheat directly in the oven to bring back that fresh-baked fragrance.
