Italian recipe JAM TART

The jam tart is perhaps the first dessert that comes to mind when you want to prepare a simple dessert that everyone likes. A shortcrust pastry base and a jam filling.

It is a genuine dessert, which is easy to keep, easy to take to parties. Despite its simplicity it is tasty and everyone likes it.

I had a jar of orange marmalade already open in my fridge so I used that.

Feel free to use your favorite jam.

The shortcrust pastry recipe is the one that has been handed down in my family for generations.

Ingredients

  • 2.5 cupsflour (Cake/Pastry flour 300 g)
  • 1 teaspoonbaking powder for sweets (5 g)
  • 11/2 teaspoonsalt (2,5 g)
  • 7 ouncesbutter (unsalted butter, at room temperature 200 g)
  • 11/2 cupsugar (100 g)
  • 1egg (1 large egg, whole)
  • 8 ouncesjam (or marmelade 250 g)

Preparation

STEP 1

  1. In a small bowl, whisk together the flour, baking powder, and salt.

    In a planetary mixer with the leaf accessory, mix together the butter and sugar until the mixture is smooth.

    Gradually add the flour mixture.

    Finally add the egg and mix until the dough has joined.

STEP 2

  1. Wrap the dough in plastic wrap and store it in the refrigerator until needed.

    Transfer 2/3 of the  dough to a buttered 9-inch (23-cm) tart pan with a removable bottom.

    Using your hands, press the dough evenly into the bottom. Press the dough about 3/4-inch (2-cm) up the sides of the pan.

STEP 3

  1. Preheat the oven to 350 ° F (180 ° C). Distribute the jam or marmalade evenly over the dough in the pan.

    Cut the remaining dough into thin strips with a sharp kitchen knife.

    Arrange them on top of the jam to form the typical grid of the tart.

    Cook until the crust is golden, about 25 minutes. Let it cool completely.

STORAGE

This tart keeps beautifully for up to 3 days if well wrapped at room temperature.
