AUBERGINE PARMIGIANA

Aubergines alla parmigiana, a typical Italian dish, is a very famous and popular recipe. There are different ways to make aubergines alla parmigiana, some use thinly sliced raw aubergines or some make it with grilled aubergines, but I followed the classic family recipe with fried aubergines, which is a true spectacle of flavours and colours despite using very few ingredients such as aubergines, sauce, mozzarella and basil. AUBERGINE PARMIGIANA RECIPE HERE’S WHAT YOU NEED TO PREPARE IT

INGREDIENTS

2 aubergines
1 kg peeled tomatoes (passata)
Coarse salt to taste
2 eggs
Flour to taste
Seed oil for frying
3 mozzarellas
150 g grated parmesan cheese
Basil to taste
One onion clove
Extra virgin olive oil

Steps

To make aubergines alla parmigiana, first you have to wash the aubergines, remove the stalks and cut them into not too thick slices. Prepare a bowl with flour.

Open the eggs in a dish, beat them with a fork and start to coat the aubergine slices in the egg

After dipping them in egg, flour them on both sides. Pour some oil into a frying pan and when it is hot, start frying the aubergines a little at a time.

When they are nice and soft, drain them on paper towels. In the meantime, put the onion clove with a little oil in a saucepan

Put it on the stove and sauté the onion. Pour the tomato puree into a bowl and when the onion has taken on a nice colour, remove it from the pan.
At this point, pour the tomato into the pan, add the basil leaves and stir
Also add salt and leave to season for about 15 to 20 minutes. In the meantime, start cutting the mozzarellas
Cut them into small pieces, take the parmesan cheese as well and when the sauce is ready, take an ovenproof dish and start composing the parmigiana. Sprinkle the bottom of the baking dish with sauce.
Cover the bottom of the oven dish with a layer of aubergines, cover the aubergines with sauce
Add the mozzarella and then sprinkle with Parmesan cheese. Continue this way with the layers until the aubergines are finished. Usually you make three layers. Bake at 180 degrees for about 20 minutes.
