Homemade tagliatelle made with spelt flour

Homemade tagliatelle made with spelt flour are a delicious fresh pasta, very easy to make, with a unique flavour and a rustic colour.

They go wonderfully well with any sauce: from rich meat sauces to the simplest butter and sage. These tagliatelle have a lovely body and that distinctive flavour that only spelt flour possesses.

“I’d never used this flour before, and today I decided to give it a go with something quite simple – making fresh pasta. Well, I have to tell you that the pasta went down a treat at home: they didn’t even give me time to take a quick photo of the dish once it was served!”

I served them with a white sauce made with pumpkin and sausage, which was so tempting that they polished it all off. Luckily, I had time to snap a photo of the freshly made tagliatelle for you – at least you can see just how lovely they looked

Steps

How to make tagliatelle with spelt flour

Mix the flours: In a bowl (or on a work surface), tip the two types of flour – which have been sifted beforehand – and form the classic well in the centre.

Add the liquid ingredients: Crack the eggs into the centre of the well, then add the olive oil and a pinch of salt. Start incorporating the eggs into the flour using a fork.

Knead: Knead the dough by hand until it is smooth and firm.

Tip: If the dough is too dry (this may depend on the size of the eggs), add a couple of tablespoons of water at room temperature to soften it.

Resting: Shape the dough into a smooth ball, wrap it in cling film (or cover it with a clean tea towel) and leave it to rest for about 30 minutes.

Rolling out and cutting

Roll out the dough: Take the dough ball and roll it out using a pasta machine (the classic ‘Nonna Papera’) or by hand with a rolling pin. Roll it out to a thickness that isn’t too thin; or, if you prefer a lighter texture, roll it out to the desired thickness.

Drying the pasta sheets: Cover the sheets with a tea towel and leave them to rest for about 15 minutes.

Shaping the tagliatelle: Shape the tagliatelle by cutting them by hand or by passing the sheet through the appropriate roller on the pasta machine.
