As I already said, preparing the feta and cantaloupe pasta salad is extremely easy and fast and you can prepare the various ingredients for the salad (which do not need to be cooked) in the time it takes to boil the pasta.
In a large pot, bring plenty of water to the boil, add a spoon full of salt and, as soon as it starts boiling again, add the pasta. Let it cook for the time indicated on the package, drain it very well and put it in a large salad bowl. Drizzle it immediately with a couple of tablespoons of extra virgin olive oil.

While the pasta is cooking, peel the cantaloupe melon, remove the seeds, cut it into slices and measure out about 12.3 oz (350 g – 2 cup approx). Cut it into fairly small cubes. Also cut the feta into cubes of the same size.

Put the cubes of feta and cantaloupe in the salad bowl with the pasta and season with another 2 tablespoons of oil, a pinch of pepper and a few mint leaves.
I suggest you don’t add more salt, the feta itself is salty enough. Let the pasta salad rest in the refrigerator for at least an hour.
