Steps Easy Profiteroles Recipe

Let’s start by preparing the cream puffs.
You can make them the night before and store them covered with a clean tea towel to keep them fresh.
For the filling, we used classic custard, but whipped cream—whether freshly whipped with sugar or a ready-to-use sweetened vegetable version—works beautifully too.

How to make cream puffs:
Melt the butter in a saucepan with water, salt, and sugar. Once melted, add the flour all at once and stir continuously over medium heat until the mixture pulls away from the sides of the pan and forms a dough.
Let it cool slightly, then add the eggs one at a time, mixing with an electric hand mixer until each egg is fully incorporated and the batter is smooth and glossy.
Transfer the choux pastry into a piping bag fitted with a large round nozzle. Pipe small mounds onto a baking sheet lined with parchment paper.

Bake in a preheated oven at 428°F (220°C) for 15 minutes, then reduce the temperature to 374°F (190°C) and bake for an additional 10 minutes.
⚠️ Important: Do not open the oven during baking, or the puffs may collapse.

To prepare the chocolate glaze:
In a small saucepan, heat a little water. Meanwhile, place the chopped chocolate in a heatproof bowl and melt it by stirring continuously over the steam. Once melted, turn off the heat and gently stir in the cream until smooth and glossy.
Take each cream puff and dip the top into the chocolate glaze. Arrange them on a serving plate, stacking them to form a tower.
If you have some whipped cream, you can decorate the tower with small swirls for an elegant final touch.

Storage:
Once assembled, profiteroles are best enjoyed fresh, as the choux pastry can soften over time. However, you can store filled profiteroles in the refrigerator for up to 1–2 days in an airtight container.
For best texture, keep the cream puffs unfilled and unglazed if preparing in advance. Store the choux shells in a dry place for up to 2 days, and fill and glaze just before serving.
Freezing:
The unfilled choux pastry shells can be frozen. Let them cool completely, then freeze in a sealed bag or container. When ready to use, thaw at room temperature and re-crisp in the oven at 300°F (150°C) for a few minutes.
Variations:
Filling options: Swap the custard with vanilla pastry cream, chocolate mousse, whipped cream, or even ice cream for a frozen twist.
Glaze alternatives: Try white chocolate, dark chocolate, or caramel glaze for a different flavor profile.
Serving idea: Arrange the profiteroles into a pyramid shape and drizzle with chocolate for a dramatic presentation, or serve individually with a dusting of powdered sugar.
Tip: Add a drop of liqueur (like Grand Marnier or rum) to the custard for a refined touch – perfect for special occasions!

Frequently Asked Questions (FAQ)

Can I make profiteroles ahead of time?

Yes! You can prepare the choux pastry shells a day or two in advance. Store them in an airtight container at room temperature, and fill them just before serving for the best texture.

Why did my cream puffs deflate after baking?

This usually happens if the oven was opened during baking or the temperature was not consistent. Make sure to keep the oven closed until the puffs are fully cooked and golden.

Can I freeze profiteroles?

Yes, you can freeze unfilled choux pastry shells. Let them cool completely before freezing. When needed, thaw at room temperature and warm in the oven for a few minutes to bring back crispness. Avoid freezing filled profiteroles, as the filling may affect texture when thawed.

What can I use instead of custard?

You can use whipped cream (sweetened or unsweetened), chocolate mousse, pastry cream, or even vanilla or coffee-flavored ice cream for a frozen version.
