Zucchini omelette

Baked zucchini omelette with provola cheese.

If you find yourself in the fridge some zucchini, some eggs and some cheese, you have the right ingredients for an easy, quick and tasty second that can conquer the whole family.

In this recipe you will not have to fry anything, the zucchini will be re-baked in the oven for a few minutes, then added to the eggs, arranged in a pan and stuffed with cheese before finishing again in the oven for the final cooking.

This recipe with zucchini and eggs takes little time and very little effort, but the result is so delicious that you will receive compliments from everyone, even those who do not love zucchini, like my kids!

Ingredients

3 courgette or zucchini squash (medium)
1 onion (medium)
q.s. spices (and salt)
q.s. olive oil
1 ounce parmesan cheese (or grana cheese, grated)
1 tablespoon breadcrumbs
3.5 ounces smoked provola cheese (or sweet)
3 eggs

Steps

Wash the zucchini and remove the ends, slice them not too thin and collect them in a bowl. Peel, rinse and chop an onion, collect it in a bowl with the zucchini, add a little oil, a pinch of salt and spices to taste (I love to add the mix of spices for roasting with salt), stir.

Spread everything on a baking sheet and bake in a ventilated oven at 355 ºF for 15 minutes, turning occasionally.

Beat the eggs with the grated cheese, add the zucchini and the breadcrumbs.

Cover a 8,5 inches (22 cm) baking tray with baking paper and pour half of the mixture, spread over the provola and the rest of the mixture.

If you want to make a light zucchini omelette, you can avoid adding it, the result will still be delicious.

Bake in a ventilated oven at 355ºF for 15-20 minutes, or until it seeps into the centre, it will not be dry.

Remove from the oven, let stand for 5 minutes and bring to the table still hot and stringy.

You can cook the omelette a few hours in advance and heat it in the microwave for two minutes at 750w or in a pan with a very low heat, just before serving.
