Risotto with mozzarella and tomato souce

The stringy and creamy tomato rice is a super easy dish, but at the same time super good, perfect for the whole family and especially suitable for children.

It is prepared in a few minutes, it’s tasty, colorful and with its stringy mozzarella, and makes everyone fall in love with it.

I often prepare it when I don’t know what to bring to the table , but it is a real passe par tout for all occasions!

Ingredients

1.2 pounds arborio rice
3.5 ounces onion
0.8 pounds tomato puree
Half pound mozzarella
q.s. olive oil
q.s. water (about 1,2 Liters)
q.s. salt
q.s. cheese (grated, only if you want it)

Risotto with mozzarella and tomato souce, step by step:

Slice and brown the onion in a good turn of olive oil, add the purée, season with salt and cook over a moderate heat for fifteen minutes.

Add water and bring to a boil.

Add the rice, season with salt and let it cook stirring often.

When cooked, turn off, add the diced mozzarella (unfortunately I don’t have the photo, but you just have to cut it and add it to the rice) and stir, add basil if it is in season and turn until the cheese has become streaky. If you like, add about an once of parmesan or parmesan cheese, serve immediately and still warm.

If you want you can also add fresh basil, if in season
