In order to obtain a perfect Cappuccino Cream all the ingredients must be cold so take them from the fridge at the last moment.

Since it is very important that all the ingredients are cold, first prepare a cup of concentrated espresso coffee and let it cool completely. Cooling the coffee is essential for the success of the recipe: if you put the hot coffee in the whipped mascarpone cream it melts. Instead of espresso coffee you can use soluble coffee: dissolve 10 g of soluble coffee in a cup of boiling water, mix well and leave to cool completely. If you don’t want to wait for the coffee to cool you can speed up the process by putting it in the fridge.

While the coffee cools, put the mascarpone cheese in a bowl and mix it quickly with a fork to soften it, then add double cream and start whipping with an electric mixer. After a minute, start adding icing sugar a little at a time, continuing to whip the cream. As soon as the cream begins to have a denser and more compact consistency, add the coffee slowly, continuing to whisk until it has a dense and frothy consistency (about 5-7 minutes in total).

Now that the Cappuccino cream is ready you can serve it divided into many small cups or glasses and make it more delicious with some grated dark chocolate on the surface or some whipped cream. You can also use Cappuccino Crema to fill cakes or to prepare Tiramisu.

CAPPUCCINO CREAM WITHOUT DOUBLE CREAM

If you want to prepare Cappuccino Cream without double cream you will need: 250 g mascarpone, 1 cup of espresso coffee, 2 tablespoons granulated sugar. Just put the mascarpone in a bowl, work with a spatula to make it creamier, then add sugar and start whipping with an electric mixer until the ingredients are perfectly blended. Finally, add completely cooled espresso coffee and incorporate, stirring with a spatula.

NOTE

You can prepare Cappuccino Cream in advance, a few hours before serving and store in the fridge. In this case I advise you to already divide into portions
